- 3 tricolor beets
- 1/2 cup Arugula
- 1 white peach
- 1 yellow peach
- 2 tbps goat cheese honey goat cheese preferred
- 1/4 red onion
- 2 tbps apple cider vinegar
- 2 tbps Cholaca

Instructions
- Peel, boil and slice beets
- Sautee onions in 1 tsp olive oil and 2 tbsp Cholaca for approx 7 mins on med/low
- Slice peaches and toss with beets with apple cider vinegar
- Top arugula with peachs, beets, onions and goat cheese
