Vegan Cholaca Pumpkin Pudding
  • 2cups Pumpkin Puree1 15 oz can
  • 1/2cup Cholaca
  • 1tsp vanilla extract
  • dash cinnamon
  • pinch Nutmeg
  • 3/4cup Almond Milk
  • 1/2cup Maple Syrup
  • Pecans
  • Small Marshmallows
  1. In a mixing bowl – add in the pumpkin, cholaca, vanilla, nutmeg, cinnamon, and stir together. Gradually add in the milk until you get a good consistency. Finally add in the maple syrup.
  2. Next, pour the ingredients from the bowl into a blender or food processor and blend on low for 45 seconds. Distribute the mix into small bowls or ramekins and refrigerate for at least two hours (optional: overnight).
  3. Remove bowls from fridge and top with crushed pecans and marshmallows. Serve and enjoy as a healthy thanksgiving dessert!
